  1. Don’t give up on the cardoons! They need to be twice cooked to remove the bitterness, so after the boil, they go in for the gratin bake and voila! They come out all cheesy, soft and delicious. Enjoy!

  2. Thanks, Judith. I am definitely going to give it another try, and turn those cardon’ts into cardoons!
